Vegetable Biryani and Khubuli– From the kitchen of Mumtaz Pasha

Ingredients

  • 1 kg rice
  • 1 kg mixed vegetables medium sized (Beans, Peas, Carrots, Cauliflower, Potatoes)
  • 2 long onions (sliced and fried in oil)
  • 1 cup oil
  • 1 cup curd
  • 1 tsp chili powder
  • 3 tsp ginger garlic paste
  • ½ tsp haldi powder
  • 2 bunches fresh coriander
  • 1 bunch mint
  • 10 green chillies
  • Juice of 1 lime
  • 2 tsp garam masala powder (10 elaichi, 6 cloves, 1 tsp shahjeera, 2 pieces dalchin)
  • Salt to taste
  • 1 cup milk
  • 6 cardamom / elaichi
  • 6 cloves
  • ½ tsp shajeera
  • 2 pieces cinnamon / dalchin
  • 1 tsp ginger garlic paste
  • 2 tsp salt
  • Method

  • Wash and soak te rice in water.

  • Fry the vegetable in oil very lightly. Remove and keep it

  • In a vessel put 2 tsp oil and add few pieces of whole garam masala then add the ginger garlic paste and fry till lightly browned.

  • Add chilly powder, haldi powder, green masala, browned onions and fry for a minute.

  • Add the curd and fried vegetable, powdered garam masala and serving for 10 minutes. Remove from fire and add lime juice

  • In a vessel boil 3 liter water, when boiling add salt, whole garam masala and the rice.

  • Cook on high flame till ¾ cooked. Drain the excess water.

  • Put half the rice on it, spread the cooked vegetables and then spread the remaining rice.

  • Mix milk, left over oil and 1 cup of water in which the rice was cooked. Pour evenly on top of rice. Seal the edges and cover, put some weight on it.

  • Cook on high flame till steam comes out of it. Lower the heat and cook for 15 minutes.

  • KhubuliUser 1/2kg boiled channa dal instead of fries vegetables and prepare in the same manner as vegetable biryani,
