Tamatar ki Loongi ….from the kitchen of Anju Poddar
To serve 6
Ingredients:
1/2 kk Tomatoes Banglore
1 tbsp oil
1 tsp Panchphoren( Kalongi, Methi, Jeera, Rai, Saunf…in equal quantity)
1tsp cut Ginger
1 tsp cut Green Chilli
1 twig Curry leaf
1 pinch Hing
2 tbsp sugar
1 tsp red chilli powder
2 tbsp cut coriander leaves
1tsp roasted Jeera powder
Salt to taste
Method:
Cut tomatoes in 1” pieces
Heat the oil…add panchphoren, Ginger, green chilli, Hing, curry leaves
Cook for a minute add tomatoes, salt and sugar cover and cook on medium flame for five minutes
add red chilli powder…after two minutes add 1/2 cup water cook for 2 minutes add Jeera powder and fresh coriander leaves.
