Spinach Corn toast

Spinach Corn toast –Recipe shared by Sangita Biyani


To serve Six

Ingredients

  • 6 pieces of Big Sandwich Bread slices
  • 1 sweet corn
  • 1/2 bunch Spinach leaves
  • 2 pods of Garlic
  • 1 Green Chili
  • 1/2 cup Grated Paneer
  • 1 tbsp Maida
  • 3/4 cup Milk
  • 1tbsp olive oil
  • 1/2 tsp fresh ground Rai powder
  • 1tsp Pepper
  • Salt to taste
  • Garnish
  • Olives black
  • 1 Red Capsicum
  • Mint leaves
  • Method

  • Wash and finely dice the Spinach.

  • Remove the Corn kernels from the corb.

  • Break the Paneer ….mash or grate it

  • In a pan heat the Olive oil..put diced Garlic and green Chillies…put Spinach and Corn …on top pour the Maida and Milk and mix well

  • To this add Pepper, Rai powder and salt.

  • Mix paneer in this and cook for 2 minutes.
  • Cut the bread round…further slice in to two pieces like a half moon.

  • With a spoon carefully put the cold corn mixture on the bread slices.

  • Garnish with Olives, Red Capsicum slivers and Mint leaves.

  • Please decorate the bread just before serving…serve fresh.
