Spicy Nagpur Chidwa from the kitchen of Manju Saraf
Ingredients
1 kg Cotton poha/Chidwa thin number two
250 gms Onions
200 gms Phuta Chana Daal/Dalia( used for South Indian Chutuny)
200 gms Raw peanuts
8-9 Green chillies
3 Sticks of curry patta
200 gms Oil
1tsp Turmeric
1.5 tsp Red chilli powder
1 tsp Jeera
1 tsp Rai
2 tsp Sugar
1.5 tsp Salt
Method
Dry chidwa in bright sunlight for an hour and a half/if there is no sunlight microwave the chidwa till crisp
Cut the onions into thin long slices, and fry till they are crisp and brown, and keep them aside
In the same oil fry the finely cut green chillies till they are crisp and keep them aside
Dry roast the chidwa in a kadai till it’s its crisp,then strain it through a metal sieve to remove the powder.
To this, add fried onions and green chillies and mix.
Dry roast the peanuts in a Kadai till the skin comes off.
Heat the oil, add jeera, rai, daal, peanuts, curry leaves, turmeric,red chilli powder and salt. Into this pour the chidwa along with onions and green chillies. Mix it well. While removing from the flame add the sugar (optional)
Allow to cool and then store in an airtight container .
