Sabudane ki khichadi

To serve four

Ingredients

1 cup Sabutdaana

2 medium size boiled Potatoes

4 table spoons of coarsely grounded roasted Peanuts

3 slit GreenChillies

1 tbsp finely diced Ginger

2 twigs Curry leaves

1 tbsp cut Coriander leaves

1/2 lemon

2 tbsp Ghee

How to make

Lightly wash the Sabutdaana…drain…
soak in one cup of water( the quantity of water should be equal to that of Sabutdaana)…once the Sabutdaana soaks the water it is ready to be cooked

Slightly roast and pound the peanuts

Boil & peel the Potatoes & dice them in small pieces

Heat the ghee in a pan…add ginger, green chillies & curry leaves…once the chillies splutter add the potatoes…cook for 2/3 minutes.( optional…can add 1 tsp cumin seeds in baghaar also)

To this add the Sabutdaana…add the salt ( we do not add turmeric or red chilli powder)… mix and cook on slow flame for 5 minutes.
Pl do not cover with a lid as it will become soggy.

Before serving add peanuts, coriander leaves and lemon juice.

Note. Tastes better if made just before serving.
Good snack for fasting as it is without cereal.
