Punjabi Chola Recipe… From the Kitchen of Pallavi More

Ingredients:
500gms kabuli chana/ chola
1-2 tej patta
1 stick cinnamon
2 cloves
4 cardamoms
2 tsp tea leaves
5-6 onions
10-15 garlic pods
1 tsp cumin seeds
4 tomatoes
1” piece of ginger
2 green chilies
100 gms dried anaar dana
4 tsp Badshah chola masala
1tsp kasturi methi
2 tsp roasted jeera powder
4 tbsp oil safola
Salt to taste
 
Method:
Soak the chana/ chola for five to six hours in water. Then remove the water, put the water in a separate vessel. Add 2 teaspoons of tea leaves to this water ….boil it and strain it again.
Mix the tea decoction back into the chana.
Put the chana in the pressure cooker to boil…To this you add 1 tsp oil, 1 tej patta, 1 stick of cinnamon, 2 cloves, 4 green elaichi and cook it till 4-5 seetis.
Next cut 5-6 onions and 10-15 garlic pods, cut it small and keep it aside.
Cut 4 tomatoes, mix in a grinder, keep it aside.
In a mixer, grind 1 inch of ginger and 2 green chilies, blend and keep it aside.
Soak 100 gms of dried anaar dana for 10 mins, grind, strain and keep it aside.
Heat the saffola oil in a pan, add 1 tsp cumin seeds and roast the onion and garlic, cook it till it becomes light brown. To this the tomato paste. Cook for 5 minutes and add ginger and chili paste, add 4 tsps of Badshah chola masala and prepared anaar dana.
Add the boiled cholas.
Mix it well and cook for a while.
on top put kasturi methi and 2 tsp of roasted Jeera powder.
Switch off the flame.
 
Notes: This channa goes well with batura.

Ingredients:
2 cups of maida
¼ cup suji
3 tsp curd
 
Method:
Mix Maida,suji & curds together…
Using little water make a soft dough.
Let the dough sit for half an hour.
Then roll it and deep fry it like poori.
