Pulusu – From the Kitchen of Sri Devi Badiga

Ingredients

  • 200 grams Bottle gourd / lauki
  • 2 drumsticks
  • 100 grams ladyfinger / bhindi
  • 100 grams brinjal / baigan
  • 4 cut green chillies
  • 1 medium sized onion
  • 2 medium sized tomatoes
  • ½ tsp red chili powder
  • ¼th tsp turmeric powder / haldi
  • ½ tsp coriander powder / dhaniya
  • 1 tsp grated jaggery / gud
  • 10 grams tamarind juice / imli
  • 4 twigs of curry leaves
  • 1 cup of water taken from the top of the dal which you have cooked in the house
  • For Seasoning

  • ½ tsp fenugreek seeds / methi
  • ½ tsp oil
  • ½ tsp mustard seeds / rai
  • ½ tsp cumin seeds / jeera
  • 4 dried red chillies
  • 2 twigs of curry leaves
  • 1 bunch of coriander leaves
  • Method

  • Wash, peel and cut all the vegetables, add the spices mentioned above in the pressure cooker along with the dal water and pressure cook till one whistle.

  • Heat the oil; add ½ tsp fenugreek seeds, mustard seeds, cumin seeds, red chillies and curry leaves then pour this into the Pulusu mixture.

  • Sprinkle cut coriander leaves on top of it.
