Pulusu – From the Kitchen of Sri Devi Badiga
Serves 6 people
Ingredients
200 grams Bottle gourd / lauki
2 drumsticks
100 grams ladyfinger / bhindi
100 grams brinjal / baigan
4 cut green chillies
1 medium sized onion
2 medium sized tomatoes
½ tsp red chili powder
¼th tsp turmeric powder / haldi
½ tsp coriander powder / dhaniya
1 tsp grated jaggery / gud
10 grams tamarind juice / imli
4 twigs of curry leaves
1 cup of water taken from the top of the dal which you have cooked in the house
For Seasoning
½ tsp fenugreek seeds / methi
½ tsp oil
½ tsp mustard seeds / rai
½ tsp cumin seeds / jeera
4 dried red chillies
2 twigs of curry leaves
1 bunch of coriander leaves
Method
Wash, peel and cut all the vegetables, add the spices mentioned above in the pressure cooker along with the dal water and pressure cook till one whistle.
Heat the oil; add ½ tsp fenugreek seeds, mustard seeds, cumin seeds, red chillies and curry leaves then pour this into the Pulusu mixture.
Sprinkle cut coriander leaves on top of it.
