Pineapple Curry

Ingredients

  • 1-Pineapple
  • 100 gms cashew nuts/kaju
  • 1/2 fresh coconut
  • 1 tablespoon khuskhus/poppy seeds/ posta
  • 1 tsp garam masala/ all spices
  • 2 tsp salt to taste
  • 1 1/2 big red chillies
  • 1/2 tsp rai/ mustard seeds
  • hing/ asafoetida
  • curry leaves
  • Turmeric/ haldi powder
  • Coriander / dhania patti for garnishing
  • Method

  • Remove skin and dice the pineapple to small pieces .

  • In a cooker heat 2tsps oil.

  • Add hing, curry leaves and turmeric and add pineapple pieces along with half the amount of salt.

  • Saute for 2/3 minutes.

  • Meanwhile for the masala grind coconut, khuskhus, and chilli powder with water to a smooth paste.

  • Add this masala paste to the pineapple mix well.

  • Saute for 2/3 minutes.Now add remaining salt and garam masala along with some water and pressure cook to 3/4 whistles.

  • Later garnish with kothmir leaves.

  • Note:If pineapple is sour you add jaggery during tadka it gives good taste don’t use sugar.
