Paneer Besan Toast

Paneer Besan Toast from the kitchen of Anju Poddar

To serve 4

Ingredients:

6 Sandwich Bread Slices

1 ltr Milk for Paneer

200 gms Besan powder

1 Green Chillie

1/2″ Ginger

1 bunch Kothmir/Dhaniya Pattie

1/4 tsp Pepper

Salt to taste

2 tbls Cooking Oil

Mehod:

Making Paneer…Boil the Milk…as it comes to boil..remove from the flame and put whey or juice of one lemon to break the Paneer….let it sit for 5 minutes and then put it in a sieve and wash it under running water.(if you are using whey then washing the paneer is a must….if you are breaking with fresh lemon juice then washing is not necessary).

Mash the paneer well add finely chopped green Chili, finely chopped ginger & Dhaniya pattie, pepper and salt.

Add little salt and water to Besan…consistency should be that is a Dosa batter.

Between two slices of bread evenly spread one third of the paneer mixture….then dip it in the Besan batter…all four sides of bread should be covered evenly.

Heat the girdle and cook the bread on both sides using oil….press the bread with the broad spoon

Remove the bread, cut it in 4 equal squares, again cook each square from all for sides till Golden​ brown.

Serve it hot with green mint chutuny.
