Pachi Pulusu – Recipe shared by Sri Devi Badiga

Serves 6 people

Panch Pulusu
Ingredients

  • 200 grams medium sized brinjals with seeds
  • 100 grams tamarind / imli
  • 10 grams jaggery / gud
  • 1 medium sized onion
  • 4 green chillies
  • 1 twig coriander leaves
  • Salt to taste

Method

  • Roast the brinjal on direct flame by slowly rotating each piece.
  • Roast the green chillies, 3-4 at a time, on direct flame, by slowly rotating.
  • Soak tamarind in 2 cups of water for 10 minutes, mash it, remove the juice and strain it.
  • Peel the brinjal and remove the stem from the green chillies, mash them and then put them in tamarind juice.
  • Grate the jaggery and add it to the mixture, then cook it for 3-4 minutes.
  • Add finely chopped onion, coriander leaves and salt.
