Mirchi Ka Salan – From the kitchen of Mumtaz Pasha
Method
Fry the chillies lightly in oil and keep aside.
In the same oil, put the fenugreek seeds and few cumin seeds.
When browned, add onions and fry till lightly browned.
Add all the masala and fry till well browned.
Soak the tamarind in 2 cups of water and squeeze out all the juice. Add the tamarind water, the fried chillies, coriander and curry leaves and then simmer for 15-20 minutes.
