Mirchi Ka Salan – From the kitchen of Mumtaz Pasha

Mirchi Ka Salan
Ingredients

  • ¼ kg thick green chillies
  • ¼ kg oil
  • ¾ kg sliced onions
  • Few fenugreek seeds
  • 1 tbsp coriander roasted paste
  • 1 tsp cumin seeds / jeera
  • 2 tsp sesame / til
  • ¼ dry coconut
  • 1 tbsp ginger garlic paste
  • ½ tsp turmeric powder
  • ½ tsp chili powder
  • 1 bunch of coriander
  • ½ bunch curry leaves
  • Tamarind (size of large lemon)
  • Method

  • Fry the chillies lightly in oil and keep aside.

  • In the same oil, put the fenugreek seeds and few cumin seeds.

  • When browned, add onions and fry till lightly browned.

  • Add all the masala and fry till well browned.

  • Soak the tamarind in 2 cups of water and squeeze out all the juice. Add the tamarind water, the fried chillies, coriander and curry leaves and then simmer for 15-20 minutes.
