Recipe of Mathri /Suhali from the kitchen of Alka Jalan

Mathri Suhali
Ingredients

  • 1 kg Maida or use 750 gms atta and 250 gms maida
  • 250 gms ghee for moin
  • About 1 tsp ajwain carom seeds
  • 2 tsp salt
  • Ghee or oil to deep fry
  • Method

  • Mix maida,salt,ghee& ajwain well make a tight dough by mixing small quantity of water
  • After the dough is ready make small balls about 60 will come
  • Roll each ball ‘pedi” in about 2.1/2 inches round
  • Prick the round with a fork so that it does not puff up
  • Heat the ghee or oil and
  • Fry a few Mathai at a time on low flame till brown should take 15 to 20 minutes for one lot
  • Note:one can replace maida with atta wheat flour
  • Eat with pickles or hot tea.
    Good snack to travel with.
  • option 2:

  • 750 gm maida
    15 gm dalda
    2 pinch salt.
    Putting dalda as against ghee makes it crisper
