Mango Salad

Mango Salad……from the kitchen of Lata Gupta

Ingredients :

1 Langda mango (1/2 kachcha 1/2 paka) – cut into julienne + keep a little mango aside to be scooped out in small balls for decoration
1/2 Red capsicum – julienne
1/2 Yellow capsicum – julienne
1 tbsp Mint leaves…Pudina

Dressing :
2 tbsp Peanuts – roast + crush
1 tbsp Imli pulp – soak in warm water + sieve the pulp
1/2 tbsp Honey
1 tsp Chilli flakes
1/4 tsp Black pepper powder
1/4 tsp White pepper powder
Pinch of Black salt to taste
Pinch of Himalayan pink salt to taste
1/2 tsp Soya sauce – light
2 bird eye chillies- hand crushed freshly (koot kar)

How to prepare –
Mix all the ingredients of the dressing separately.

For decoration:
A few scooped out mango fruit balls
A table spoon roasted and crushed peanuts

Add the dressing to the salad before serving.

Serve with roasted peanuts sprinkled on top along with the scooped mango balls.

Note –
Optional add 2 red Plums julienne for texture
