Mango Salad From the kitchen of Vandana Poddar

To serve six

Ingredients:
1 1/2 Medium size mango, either Langda or a little sour variety – cut into half inch cubes
1” ginger – peeled and cut into very small pieces
1/2 Kairi / Raw Mango -grated
1/2 Red Capsicum – cut into small pieces
Hand full of coriander leaves
Little (2 tbsp) Green onion – chopped
I/2 Lemon – juice
1/2 tsp Red chilli flakes
Salt to taste

How to Cook:
Mix together the mango pieces, ginger, Kairi,capsicum, coriander leaves, green onions, chilli flakes and lemon juice.
Add salt just before serving.

Note:
-Doesn’t taste well with Alphonso.
-Mango has to be a little sour.
-As we are using raw mangoes, use very little lemon juice just to bring out the flavour.
-Green onions and Capsicum add to the crunch and colour.
