Makkai ki Roti

Makkai ki Roti from the kitchen of Neera Sahany

For 10 / 8 Roti Depending on Size.

Ingredients :
2 cups Makkai flour
1 /2 cup Wheat flour
Warm water to knead.
Little salt ( if u like to have it a bit salty. Otherwise you can avoid. )
Ghee for application.
Little dry wheat flour for coating.

Method
1. Mix Makkai flour + wheat flour and salt and knead it with warm water. Keep aside for 1 hour.
2. After an hour heat tava on fire.
3. Roll on the Chakla that is roti maker with hand with the help of some dry flour as thin as u can.
4. To pick the roti tilt the chakla from one side and slip it on to the hand and then on to Tava.
5. After it is cooked on one side turn and let the uncooked side to cook till little brown dots can be seen on the Roti.
6. Now fry on both sides with a little bit of ghee n serve. Make sure it doesn’t turn too brown.

Makka Mooli Roti.

You need to mix grated Mooli ( after squeezing out excess water out of it by pressing out with both hands. Care must be taken not to dry out the Mooli completely ) in the Atta with a bit of green chili and grated ginger salt and a bit of red chili if you like.
First see if any more water is required to be added to Makkai Atta then only do so.
Now you may roll out Chapattis and roast them on tava and and add a bit of ghee on both sides.
