Method
Corsley lightly ground the kairia.
Make a paste of pealed garlic and chillies.
Heat the oil give baghar of panchphoran add the garlic chilli paste roast for a minute add the lighhtly pounded kairia
Mix the kairia in this paste.
Add salt.
Smoke it (in a small metal bowl put a lit coal pour a littke ghee ) put your kairis in a big vessel place this katori in the centre of the bowl and then only lit the coal and pour ghee cover it with a lid or newspaper for a five minutes for the smoke to settle in. Remove the cover .Before serving remove the katori.
On the fried triangles, apply green chutney, garlic chutney and tomato sauce.
Note : Smoke it just before serving.
