Idli – Recipe shared by Kala Karthikeyan
Recipe for 24 normal size idlis
Ingredients
3 cups parboiled rice
1 cup black gram dal/ urad dal
1½ cup Water
1 tsp salt
1 tsp of Eno
Method
Wash and soak rice in water for 6-8 hours.
Wash and soak urad dal separately for 6 hours.
Drain urad dal and grind sprinkling up to one cup of water to make smooth fluffy batter. This batter should not sink in the water.
Drain rice and grind to make a slightly grainy batter with ½ cup of water.
Note: Volume wise one cup of ground urad dal batter should be equal of 3 cups of ground rice batter.
Combine both batters in a large container.
Dissolve 1 tsp of Eno and 1 tsp of salt in little water, cover the batter and let it ferment.
In the evening, boil water in the idly steamer.
Pour a ladle of batter into each depression.
Place the mould in the steamer and steam for 10 minutes.
