Idli – Recipe shared by Kala Karthikeyan

Recipe for 24 normal size idlis

Ingredients

  • 3 cups parboiled rice

  • 1 cup black gram dal/ urad dal

  • 1½ cup Water

  • 1 tsp salt

  • 1 tsp of Eno

  • Method

  • Wash and soak rice in water for 6-8 hours.

  • Wash and soak urad dal separately for 6 hours.

  • Drain urad dal and grind sprinkling up to one cup of water to make smooth fluffy batter. This batter should not sink in the water.

  • Drain rice and grind to make a slightly grainy batter with ½ cup of water.

  • Note: Volume wise one cup of ground urad dal batter should be equal of 3 cups of ground rice batter.

  • Combine both batters in a large container.

  • Dissolve 1 tsp of Eno and 1 tsp of salt in little water, cover the batter and let it ferment.

  • In the evening, boil water in the idly steamer.

  • Pour a ladle of batter into each depression.

  • Place the mould in the steamer and steam for 10 minutes.
