For Baghaar:
Method
Cut Spinach in small size, boil and keep it aside
In a iron wok put ghee. Add Panch Phoran , Hing, Tej Pata, Ginger, Green Chilies and then you put the vegetables (apart from spinach).Add salt , 1/4 teaspoon sugar and a pinch of soda.
When the vegetables are half cooked add the cut boiled spinach. Cook till done.
