Hand Churned ice cream from kitchen of Veena Modi
To serve 6
Ingredients
3 liter milk
200gm sugar
8 cardamons
pinch of saffron
ice and rock salt
Method
slowly boil 3 liter milk till in reduce to 1 1/2 liter on slow flame.
While boiling milk add 8 whole cardamoms in it. after milk is reduced to half, remove it from the flame and add sugar to it.
Let it cool. Strain the milk. add saffron to it (which is dissolved perviously in small quantity of milk). Blend it.
Put it in Icecream machine conatiner. fill half of ice cream machine bucket with ice , pour lot of rock salt so ice doesn’t get dissolved and fill again with ice.
It take half an hour for the ice cream to be ready. Store it in air tight containers
