Brinjal curry Telangana Style /Gutti Vankai kura …from the kitchen of Jyothsana

To serve 8 people

Ingredients:
1/2 kg small tender green brinjals
Sesame oil to fry

For the Stuffing:
6 cashew nuts
2 tsp jeera
2 tsp til
1 tsp whole dhaniya
4 cloves garlic peeled
2 dry red chillies
1 tomato
Salt to taste

For the Baghar:
1 tsp Rai
1 tspJeera
2 tbsp Tamarind pulp

Method:
⁃ Make four slits each in to every brinjal
⁃ Shallow fry the brinjals in oil and keep aside to let them cool.
⁃ Roast each of the stuffing ingredients separately in little oil and keep aside.
⁃ Coarsely grind all the roasted stuffing ingredients together in a grinder.
⁃ Stuff each brinjal with the above mixture.
⁃ Heat the oil and put Baghar of rai and jeera. To this add the stuffed brinjals.
⁃ Pour the tamarind pulp and mix well
⁃ Cover the pan and cook on slow flame till tender.
