Gud Sandesh from the kitchen of Lata More
To serve 6

Ingredients
1 ltr full fat Milk-
1 tabsWhey:water when you break paneer
150 gms Palm Gud/ Jaggery
6 Almonds
3tabs Sugar
1tbsp ghee

Method-
Boil the milk when it comes to first boil take it off to flame

Pour whey(it should not be older than one day )slowly first half tbsp … later more if required

Let the Chena sit for ten minutes under the fan to cool it…then strain it

Wash the Chena well in running water in a strainer

Mash the Chena very well with hand

Grate the gud melt it a little and strain it for any impurities

Gradually mix the gud syrup in the strainer and mash it well

Heat the Kadai and cook the Chena for about 5 to seven minutes.,.stirring it till the ghee starts seperating…. put it in a glass bowl

Heat the ghee and lightly fry the broken almonds

Melt the sugar and put broken almonds in the melted sugar to caramelise

Pour these almonds on a oiled plate… let it harden….coarsly crush the caramelised almonds and spread over the Sandesh

Serve it cold
