Green Salad from the kitchen of Lata Gupta
To serve 6
Ingredients :
Use green English cucumber as they are not bitter
2 cucumber with the peel on
1 cucumber peeled…cut them with fancy cutter diagnally
1 green apple with the skin – slice + julienne
1 seasonal fruit as per availability – (firm babugosha (pear) / kakdi / pineapple / green ber (available around Holi)
Green + pink salad leaves : soak salad leaves in ice water for 10-15 minutes to crisp up. Drain and pat dry them with clean paper towel.
For garnishing on the top:
One box of Micro greens – kale /for sprinkling on the top
1 tbsp roasted white Til
Fresh coconut optional to put on side to decorate
Dressing :
1 tsp Kali rai (black mustard)
1 tsp Peeli sarson (yellow mustard)
Soak both the mustard seeds in a little water for 6-7 hours.
Add one pinchHaldi,Sugar and stone grind to a paste
(Optionally can use kasundi also)
1 tbsp Lemon juice, adjust according to taste
1/2 black Pepper powder
2 tsp Rai powder
2 tsp Honey
4 tbsp thick Hung curd
8-9 Cashew nuts- soak + make cream
How to prepare
Mix all ingredients for salad dressing and refrigerate.
Mix cucumber, green apple, and lettuce leaves in a large bowl. Just before serving, toss with salad dressing.
