Dotha/ Atte ki Suhali – Recipe shared by Manju Saraf
To serve 8 persons
Ingredients
1 kg Atta / Whole wheat flour
250 gms Desi Ghee
1tsp Ajwain
Additional 1 ltr ghee to deep fry
Method
Sift the flour,mix Ajwain & salt,Add 250 gms ghee,Mix well,Add little water and make very kadak / hard dough
Break the dough into small rounds and roll individually into about 3.5 inches round.
Heat the ghee test the temperature by butting a little ball of dough in the ghee.If it comes up instantly we are ready to fry.
Put the rolled Dotha in the hot ghee.Bring the flame to verify low…Very important fry on very low flame.The slowly fry too the Dotha becomes reddish golden. The Dotha should puff up.
Serve them hot…Taste good with pickle. Taste best with tea.
