Ingredients for Vada

  • 200 gram Black gram dal/ urad dal
  • 2 green chillies
  • 1 inch ginger
  • Oil for frying
  • Method

  • Wash the dal and soak in water for 4 hours.

  • Add cut green chillies and ginger, and then grind it in the dosa grinder. Add as little water as possible.

  • Heat the oil.

  • Place a lime sized ball of batter on your hand, or if possible, on a banana leaf and pack into 2 inches diameter, 1 cm thick circles. Make a hole in the center with the finger or with the end of the spoon. Invert this on to the wet forefingers of the other hand and slide it gently into hot oil. Fry for a minute and turn over. Remove after 1 minute.

  • Keep ready a bowl of water for dipping fingers.

  • Ingredients for Dahi

  • 1 tsp black gram dal/ urad dal
  • 1 tspmustard seeds / rai
  • 4-5 dried red chillies
  • ½ tsp red chilly powder
  • 2 twigs curry leaves
  • 1 tsp cut coriander leavers
  • 1 finely cut onion (Optional)
  • Method

  • In curd, do not strain the curd. Add a pinch of salt and coriander leaves. Sprinkle ½ tsp red chilly powder on top of the curd.

  • Heat 1 tsp of oil. Add urad dal, splutter rai, dried redchilly, onion. Cook for 1 minute.

  • Pour this mixture on top of the red chilly powder in the curd,

  • Mix it lightly, add the fried Vadas in the curd. Sprinkle cut coriander leaves.

  • Cover and put it in the fridge.
