Coconut Icecream…from the kitchen of Vandana Poddar
To serve 8
Ingredients:
I Ltr…full cream milk /Amul
1/2 box…Milkmaid Nestle
1 box… Real Thai coconut
Or
11/2 …fresh coconut grated / put in blender/ strained…fresh coconut milk
2 to 4 tsp sugar
For topping
1/2 fresh coconut grated
4 tsp… powdered sugar
How to make:
Boil the milk for 10 minutes…let it cool
Add coconut milk and milk maid…add a little sugar as per taste
Keep the mixture in deep freezer for about an hour to chill
Put it in the icecream machine to churn for about 45 minutes
Store the icecream in airtight container in the deep freezer
While serving the ice cream…sprinkle a little coconut caramelised shaving
Cook on slow frame grated fresh coconut…when the colour of the coconut changes add powdered sugar to it …stir for a bit and keep it aside…to use while serving the icecream as topping.
