To serve 6
Ingredients:
Full cream milk 1 ltr to make paneer + 2 tbsp to add later
Ripe sitaphal deseeded to make 1 cup pulp
Sugar 5-6 tsp
Rosewater 1tsp
Saffron few strands
Whey 1cup or juice of 1 1/2 lemons to break the milk
Method:
Bring the milk to a boil.
Switch off the flame. Add whey or lemon juice, wait till it splits .
Strain the Paneer in a wire metal sieve. Save the whey.
In case you are using whey to split milk, wash the paneer in running water to get rid of any smell.
Let the paneer cool. Mash paneer with your palm, add sugar.
Place it in mixer jar. Add 2 tbsp milk & sitaphal pulp (saving about 2 tbsp pulp)rose water and churn.
Remove from blender and add the reserved sitaphal pulp and mix well.
Garnish with saffron strands and serve.
Note: I prefer to serve it fresh…not keeping it in the fridge.
