To serve 6
Ingredients
1 1/2 Glass(400 ml)…Milk
1/2 tsp….Corn Flour (Brown & Polson, Wikfield)
4tsp….Sugar
3 Tbsp….Rich cream( can be Amul or fresh…recommend Diclata Soya cream)
Optional
Saffron….Almonds, Pistacho, Cardamon
Sitafal pulp
Mango pulp
Strawberris
Orange segments with rind
Method
In 1/2 cup cold milk mix the corn flour and keep it aside
Boil the remaining milk on high flame for 5 to 7 minutes
To this add the cold milk with corn flower…let it boil for two minutes
Add the sugar and boil for another two minutes ( if you want to add saffron add now …as the colour of Saffron is enhanced when mixed in hot milk)
# For Simple milk ice cream
Let the cool add ilaichi powder, slivered peeled almonds and chopped green pistacho
# For fruit ice creams
Sitafal icecream… Remove the pulp of the fruit and deseed it…blend the pulp(not too much) mix the pulp to prepared milk when it becomes cold
The pulp should be the same quantity in proportion to the milk
Note…Sitafal being a very sweet fruit advisable to put less sugar in the milk preparation
Strawberry ice cream… Add sugar to the cut fruit… heat it a bit… let it cool… make a pulp… add to the prepared milk
Mango ice cream…Cot the fruit, make a pulp and add to the cold milk
Orange ice cream…remove orange segments peel them and deseed them…take out some rind of the skin of the orange in small pieces…add to the cold milk
Note…advices to consume the same day as this ice cream crystallises very soon…other fruit ice creams tend not to crystallise easily
Imp Note… please put the empty container in which you are going to store the icecream in the freezer before hand to come the container before pouring the milk p

Method:

#Coconut Icecream
Ingredients:
1 ltr Full cream milk
1 tbsp Cornflour
8 – 10 tsp Sugar
1 Coconut grated
For Garnish:
1/4 grated coconut
1tsp butter or ghee
2 tsp sugar
Method:
Boil milk till it reduces to 750 ml.
Mix cornflour in little cold milk and add to the milk while boiling.
Add sugar and boil for a few min.
Let it cool.
Add 3/4 grated coconut to mixer jar with 1 cup of milk. Blend. Sieve it
Mix in the prepared cooled milk.
Add 1/4 th cup cream and blend it again.
To this add the remaining grated coconut.
Refrigerate to cool, so that when I put in the ice cream maker, it takes less time.
Add to the ice-cream maker with the built in refrigerator.
Once done store in airtight container in the freezer.
Garnishing:
Heat ghee or butter. Add two tsp sugar and 1/4 th cup of grated coconut .
Cook on low flame till it browns.
Store in an air tight container at room temperature.
To Serve:
Top with garnish while serving icecream.
# For Fruit ice creams
#Sitafhal icecream:
Remove the pulp of the fruit and deseed it. Blend 3/4 of the pulp(not too much)
Mix the pulp to the prepared cool milk
Also add the remaining 1/4 pulp for the crunch
The pulp should be same in volume as the prepared cool milk
Note: Sitafal being a very sweet fruit advisable to put less sugar in the milk preparation
#Strawberry ice cream:
Add sugar to the cut fruit
Heat it a bit
Let it cool
Make it into a purée
Add to the prepared cool milk
Add 1/4 cup thinly sliced strawberries
#Mango ice cream
Cut the fruit, make a pulp and add to the prepared cool milk
Add 1/3 cup small mango pieces
Note: Mango being a sweet fruit, advisable to put less sugar to the milk
#Orange ice cream
Remove orange segments, peel and deseed them
Take out some rind of the skin of the orange and cut in small pieces
Add to the prepared cold milk
Note: Advice to consume the same day as this ice cream crystallises very soon. Other fruit ice creams tend not to crystallise easily

Some people recommend to use Aluminium containers for storing.
I personally use DēLonghi ll Gelataio ice cream maker with a built-in refrigerator.
